1 box yellow cake mix
¼ cup tropical fruit juice, such as pineapple, mango, etc.
2 tablespoons light brown sugar
2 cups star fruit, sliced crosswise into star shapes
¼ cup dried cherries
3 tablespoons candied ginger, diced finely
Grease bottom of a 13” x 9” pan and sprinkle evenly with brown sugar. Lay starfruit pieces on the bottom of the pan without overlapping. Sprinkle cherries and ginger across fruit.
Prepare cake mix according to box directions using tropical fruit juice in place of water called for the in the yellow cake mix. Pour batter into pan. Bake according to box directions.
Let cake cool in pan 20-30 minutes. When cool, invert onto flat tray.
